After the coffee cherries have been harvested, they are held in water for several hours. The floated cherries are run through a depulper to remove the skin and fruit of the cherry. The parchment is then fermented in a tank with no water for 8-12 hours and dried on raised beds for 15-20 days. The harvested coffee is spread on African drying beds within 24 hours of being picked. Jacqueline Turner founded Kinini Village in 2014 by leasing unused land, distributing free seedlings, and paying farmers years before the plants began producing fruit. Now, Kinini brings together hundreds of smallholder farmers and provides centralized processing and market access with incredible traceability and consistency. Many of the coffees produced at Kinini are women-led microlots. Seraphina, Kinini’s farmer liaison, leads gender equity training, which resulted in the formation of women-led subgroups within the cooperative. These sub-groups organize collectively, reinvest premiums into their farms, and advocate for shared needs within the cooperative. Finca Terrerito is vertically integrated, meaning that growing, processing, exporting, and importing are all handled by the family. \u003c\/p\u003e\n\u003cp\u003eBeyond producing extraordinary coffee, Finca Terrerito’s mission is to improve lives and engage in sustainable practices. They have dug wells and built schools and medical clinics to serve those in their own and neighboring communities in Honduras. Finca Terrerito also emphasizes the importance of providing opportunities for other producers nearby--since they act as exporters as well as producers, they are able to purchase coffee from their neighbors and export it, giving them a better price than they might get at their local cooperative. Finca Terreritio provides the infrastructure and shares this access to markets that otherwise wouldn’t exist.
