Finca Colomba - Semi Washed El Salvador (Spring - Summer 2026)
Producer Mario Valiente's semi-washed bourbon from Finca Colomba in El Salvador is a sweet and rich coffee that really shines as a single origin espresso and as an easy sipping filter brew.
Mario's semi-washed process is comprised of a few steps. After the coffee cherries have been harvested, they are held in water for several hours. The floated cherries are run through a depulper to remove the skin and fruit of the cherry. The parchment is then fermented in a tank with no water for 8-12 hours and dried on raised beds for 15-20 days. This complex process contributes to the coffee's impressive amount of depth and body.
Finca Colomba is a third generation coffee farm located in Santa Ana. Its high elevation, volcanic soil, and dedicated team all ensure the quality we get to taste. In addition to growing and producing incredible coffees, Finca Colomba also supports its local community by donating to schools and hosting medical conferences to provide accessible healthcare.
